This all happened just a few weeks ago. My day started off great. My cake was done, it looked beautiful and I was looking forward to spending the day with my girlfriend doing girly stuff.
My customer was going to pick up the cake so I headed out to make a delivery knowing my husband would be there for my customer. After dropping off the cakepops, my girlfriend and I stopped off at a local cake supply store that I had been wanting to visit for quite some time. I purchased a few items and then we were off to lunch.
I just ordered my food when I got a text which read “Carolyn, the cake fell” – right after this, so did my stomach. I knew this wasn’t a joke; some of my other friends may have done this to me, but not this person.
I immediately called her and she said the cake was falling apart, that all the buttercream was coming off the cake. I asked her to send me picture and I couldn’t believe my eyes. I have only been doing cakes a short time, less than a year, but have never had this happen before.
Needless to say, my “girly” day out was cut short and I rushed back to “fix” this disaster. By the time I saw the cake, 85% of the buttercream was off the cake. I scraped off all the buttercream and was able to salvage the cake, and then covered it in fondant.
In the end, I believe I produced an even better cake and my customer was very pleased! I even used one of the new “toys” I bought at the cake supply store earlier that day. I have to say this is one of my most “embarrassing cake moments”.

I had a 3 tier wedding cake, 1st cake i transported assembled, that the icing slide down on 1 side very much like yours. thank god i could fix it on site!

I’ve had that happen! Once because of heat and a bouncy car. I think the main reason is because of using shortening that has no trans fatty acids. Check and see if yours was that way. I only use hi-ratio now!

Lenita, I think that is exactly what happened.. it was definately humid that week and the shortening has no trans fatty acids. I will try the hi-ratio. thank you

i made my marshamallow buttercream frosting and it was hot and it started to melt right after i piped it. is it possible your buttercream was to heavy or the cake was to heavy and that’s why it slid. i always put my cupcakes in the fridge and let them sit for a few hours before the event so that nothing bad happens when i take them out an hour before the event the come out so perfect no one knows they were even in the fridge
