Baking Blunder: From Bad to Worse

I have been selling cakes on the side for the past 1 1/2 years.  I have not had any blunders… until 2 days ago that is.

The customer wanted a 3D baseball glove and in the center, a baseball, all sitting on a bigger square cake.  I had never done one before, but thought I could figure it out.

I had some help carving the mit.  I froze the cake and started carving.  It was completed and looked good.  I then crumb coated it 2 days before the event.  The night before I finished the glove, I put it on top of the 12″ square cake and had it all done.  It was airbrushed and great looking.  I didn’t put on the finishing touches because I figured I would wait until the next morning.

Well, I set my alarm for 9am to make sure I had one hour to finalize and box up the cake before the customer came.  My kids woke me up at 7:30am for something and when I went downstairs to get it, I looked at my cake and was horrified to find that one entire side of the glove had collapsed.  There was no way to salvage the glove, but luckily the base cake was OK.

I had to call the customer and ask what time the party was b/c I needed more time to redo the cake.  I had 4 hours to redo the glove, but I told her I could not do it 3D b/c there was just no time.  I began baking two 10″ cakes for the glove and a ball cake in case the glove didn’t work out.  I rushed around the kitchen at top spead getting things done.

Luckily my partner was around to help (she does not decorate, although she did carve the glove the first time).  I had her decorate the softball cake while I did the glove. I was airbrushing the glove when the airbrush falls off the table and breaks apart!  My partner had to sit on it to give it pressure, but even then it was only weakly coming out, barely enough to finish the glove.  I was literally doing the finishing touches as the customer is calling that she is on my street.

In the end, it turned out great and she got a bonus ball cake.  I don’t know how I managed to finish it all in that short a time.  Thank God my kids woke me up or I would have never finished on time.  Now that I can say I have had my first cake disaster,  I hope to never have one like that again!

That stress is aweful.  I didn’t feel right the entire rest of the day, and I was just exhausted afterwards.  I do not even have a picture of the first glove b/c I wanted to wait until all finishing touches were done.  I didn’t think to take a picture of the horrible mess of a cake b/c I was too frantic to think I might want it later to laugh about… wish I had those pics!

Baking Blunder: Baby Finds Cake

A few years ago, I had just started selling my cakes. I had an order for a full sheet cake (which is my least favorite to make) for a kindergarten graduation. The people were ON THEIR WAY to my house to pick it up just shortly after I had finished it.

My husband had just gotten home, so I was following him around the house to hear about his day. Silly me hadn’t boxed up the cake yet. I turned the corner and my sweet 1 year old was COVERED in green frosting….

I ran to the dining room and she the whole side of the cake was missing!

I didn’t know if I should laugh, cry, throw-up, scream…etc. I kept my cool and called the people and explained what had happened. They totally understood because they had little kids and I told them I was going to try to salvage it and call them back.

Thankfully the party wasn’t until the next day, so I just cut the side off and re-iced and was able to scoot everything over a little. (and I gave them a big discount).

Black Chocolate for Bold Accents

Today’s “Wow Wow Wednesday” was submitted by Rebecca O. 

Hello Everybody!

My name is Rebecca and I am a full time student. I am currently finishing my bachelors of Human Biology (Pre Med). I also work for my school and I do cake pop orders in any other free time that I might have.

I stumbled across the art of cake pops last Christmas, and ever since, I haven’t been able to stop! Maybe one day I can expand what I do into something bigger, which would be amazing. I am always running ideas through my head for new cake pop ideas.

For all those who love to experiment with different methods for decorating cake pops, here are some pics of my latest endeavor.

This was my first try with my new airbrush! I love mixing different colors for swirls, stripes and dots. I use the Amerimist colors in both pearl and regular colors. I find that the regular colors go a lot further than the pearl ones do.

 

Then, put swirls with black chocolate on top for an extra bold look! I always finish my pops with edible glitter for that extra special touch. Or use just a small amount of color, and accent it with the black chocolate to make animal print.

The rectangular pops are great for a different look too! These are mint chocolate.

KC Bakes’ tip for black chocolate:

  • Wilton sells black candy melts, especially around Halloween time.
  • Make your own – combine dark blue and dark chocolate melted candy (it will look a strange color, but hang in there). Then add black candy dye – it will look very dark grey, but it dries black. This is good when you need black just for adding accents. 
  • Make sure you are buying ‘candy’ dye that is oil-based. If your dye has water in the ingredients list, it will seize the chocolate.
  • Do not add black dye to white melts – you’ll waste an entire container of dye, and usually it never gets the whole way there. Always start with a dark color candy melt.

This all happened just a few weeks ago. My day started off great.  My cake was done, it looked beautiful and I was looking forward to spending the day with my girlfriend doing girly stuff.

My customer was going to pick up the cake so I headed out to make a delivery knowing my husband would be there for my customer.  After dropping off the cakepops, my girlfriend and I stopped off at a local cake supply store that I had been wanting to visit for quite some time.  I purchased a few items and then we were off to lunch.

I just ordered my food when I got a text which read “Carolyn, the cake fell” – right after this, so did my stomach.  I knew this wasn’t a joke; some of my other friends may have done this to me, but not this person.

I immediately called her and she said the cake was falling apart, that all the buttercream was coming off the cake.  I asked her to send me picture and I couldn’t believe my eyes.  I have only been doing cakes a short time, less than a year, but have never had this happen before.

Needless to say, my “girly” day out was cut short and I rushed back to “fix” this disaster.  By the time I saw the cake, 85% of the buttercream was off the cake. I scraped off all the buttercream and was able to salvage the cake, and then covered it in fondant.

In the end, I believe I produced an even better  cake and my customer was very pleased!  I even used one of the new “toys” I bought at the cake supply store earlier that day.   I have to say this is one of my most “embarrassing cake moments”.
